In the Extension Console, there’s an Asset Hosting tab. There I can select the Type of Extension (Panel, Video - Fullscreen, etc.) among other things.
Is it possible to change these values via an API call? If so, what is the route?
No.
There are no API calls for the Console at time of Writing.
Usually these are set once, and after release of an extension you can’t change them without releasing a new version.
