For Eventsub Authorization do you want to use the authorization code from on twitch account to watch a bunch of twitch accounts? Or should you use the authorization code of each of those accounts to subscribe?

Assuming you mean checking the status of a Channel going live, you do not require any user authorization, as stated in the docs.

Neither.

HTTP Eventsub only uses App Access/Client Credentials tokens.
