I want to show in my app using the API, the channel growth in followers (during las month?). I’ve been looking into the API and didn’t see it, so I’m not sure if this is possible or not.
Also as another feature, I want to see the average of viewers during a specific section of a stream. Suggestions would also be welcomed, I know this feature is a bit more difficult

There are no historical data API’s available.
You’d have to (with permission from the streamer(s)) collect/snapshot data periodically for the streamer(s) you are interested in.
yes, that’s what I imagined, but worth asking that question 
Another question that comes to my mind and related to the second question, can you get exact minute and second of the streaming data?
Nope.
Just whatever is in the cache so it’s 3/5 minutes “out of date”
